We are highlighting Mexico today! The recipe is chilaquiles. A delicious favorite that has a variety of ways to cook.
https://www.loveandlemons.com/chilaquiles/
Alisson, a 6th grader, says her mom cooks great chilaquiles and they are a favorite food.
Chilaquiles were originally created to use stale or almost stale tortillas.
If you want Mrs. Johnson's version of the recipe:
Fry some corn tortilla pieces in oil.
Once golden brown add salsa (salsa verde or tomatillo homemade or from a restaurant are perfect).
Fry for about a minute.
Scramble up your eggs in a bowl.
Mix in with the chip mixture in the pan. Fry until done.
Once the eggs are cooked remove pan from the burner.
Add cheese and serve.
These make great tacos with avocado and salsa with a touch of cilantro!

Our next recipe this week is empanadas!
Mr. Dean has family that grew up in Chile.
They are a yummy favorite for many Spanish speaking countries. You can find hundreds of delicious ways to cook and prepare these tasty treats.
Empanadas made their way to Chile during the colonial period. It is said that they were brought over by the Spanish and have since become a staple of traditional Chilean cuisine. They can be cooked with a variety of seasonings and fillings. And can be made sweet or as a meal item.
Here are 2 versions of the recipe. One that uses premade biscuits, and one that includes making the dough from scratch. Enjoy!
